Mum's NANKHATAI (Indian Butter Cookies)

1 cup ghee
1 cup Castor Sugar
¼ teaspoon Bicarb
Pinch of Nutmeg
1 teaspoon Elachi Powder
¾ cup Chana Flour (Gram Flour)
Approx 2 to 2.5 cups of cake flour
Beat sugar and ghee until Light and Creamy.
Add in Bi-Carb, nutmeg, elachi
Sift the Chana Flour-twice
Sift the cake flour.
Then add to sugar mixture to bind, adding the flour to make a soft dough.
Roll into a ball on the palms of your hand so that it is smooth. Place on baking tray and use a knife to make a cross indent on the top. Place an almond or dust as required.
Bake at 180 degree for approx. 15mins-20mins, check regularly - depends on your oven.
